One of the premier producers in Franciacorta, Cavalleri's history in the region stretches back to 1450 and their winemaking heritage to the early 20th century. While initially selling wine unbottled or in demijohns to locals and restaurants in the area, Cavalleri began to bottle the best of its production in 1967 with the implementation of the D.O.C. regulations. Their first wave of investment and development quickly transformed Cavalleri into one of the leading wineries in the region, both in terms of planting techniques and cellar technology.
While expanding over the years, Cavalleri has deliberately kept its production to artisanal levels of approximately 250,000 bottles annually, and has remained unwavering in their commitment to quality. A hallmark of their production is the use of only environmentally friendly pest control and their resolute refusal to acquire grapes or wine from third parties.

Cavalleri Brut Collezione 2004 900 cases per year 100% Chardonnay 48 months on the lees Produced only in the best years, this cuvee is made from wine from the vintage shown on the label, and from vineyards that are at least 10 years old. Twenty of the base wine is fermented and aged in barriques.
Cavalleri Collezione Esclusiva 2001 Giovanni Cavalleri 175 cases produced 100% Chardonnay 80 months on the lees, plus 6 months after disgorgement A small number of bottles from only the best Collezione vintages are kept on the lees for at least 6 years. Part of Cavalleri's line of exclusive Plentitude Reserve wines.
Cavalleri Curtefranca Rampaneto 2008 (still white wine) 1000 cases per year 100% Chardonnay The grapes are soft-pressed and the must decanted in preparation for steel tank fermentaion. Twenty percent of the wine is fermented and aged in French oak barriques used for the second time. Partial malolactic fermentaion. Light pre-bottling clarification and filtration.
Cavalleri Curtefranca Tajardino 2006 (still red wine) 1000 cases per year 20% Cabernet Franc, 45% Cabernet Sauvignon, 15% Merlot, Barbera and Nebbiolo Maceration and fermentation in open vats, 12 months of barrique aging. Total malolactic fermentation. Pre-bottling filtration.
